Milk in its natural unpasteurised state (available from Hook & Son) contains both enzymes and bacteria. Some of the latter can potentially be harmful, but others are good, in particular fast working lactic acid producing bacteria.  Milk contains lactose (milk sugar), which if left to its own devices is quickly converted by microbes known as Lactobacilli and Lactococci into lactic acid (milk acid). This natural fermentation changes the texture of the milk while its acidity makes the milk less suitable for other bacteria to thrive in, which in turn helps prevent it from spoiling.

A simple fermentation experiment is to clabber (curdle and ferment) some unpasteurised (raw) milk.  It has to be raw milk to work – pasteurised milk will turn bad.  Place some raw milk in a clean bowl, cover with a clean cloth or lid and leave undisturbed until the milk clabbers and separates into thick curds on the surface and thin whey underneath. To test, move the bowl very gently so that you don’t break the curd. Depending on the ambient temperature, this could take less than a day in a hot room or two weeks in a fridge. Drain the curds through some washed muslin and chill both the curds and the whey.
